  • 1 lb. zucchini, peeled and grated.
  • 1 Tbls. sugar
  • 1/8 Teas. salt
  • 1/2 - 1 teas. cinnamon
  • 1/2 cup raisins
  • 1/4 cup chopped walnuts
  • 1 tbls. oil or butter
  • 4 eggs, lightly beaten

Direcciones

  1. After grating zucchini, let it rest for 10 min. and drain off liquid.
  2. Add remaining ingredients to the lightly beaten eggs and mix well.
  3. Add this to zucchini and mix lightly. Place in a lightly greased 8" square pan and bake in preheated 400 degree oven for 25 minutes or until lightly browned.
