  • 1 sm. onion, diced
  • 2 tbsp. oil
  • 1 c. peeled tomatoes, minced (fresh or possibly canned)
  • 1/2 teaspoon salt
  • 2 whole chicken breasts, boned, skinned & cut in half
  • 1/3 c. Stonehill Farm plum butter
  • 1/4 c. soy sauce
  • 1 teaspoon white vinegar
  • 1/2 teaspoon curry pwdr (according to taste)

Direcciones

  1. Preheat oven to 350 degrees. Saute/fry onions in oil till soft. Add in tomatoes and cook 5 min. Place chicken breast on top, cover and put in oven for 20 min. Remove chicken pcs and reserve. Add in remaining ingredients to the pot, stir together and cook over low flame on top of stove for 10 to 12 min. Cut chicken into bite sized pcs and replace in sauce. Cook briefly to reheat. Serve with plain boiled rice. May be cooked in advance and reheated.
