  1. Heat together the oil and butter in a large, heavy based frying pan and brown the chicken peices over a moderate heat. Add in the garlic, spices and coriander. Cook for about 10 min, turning the chicken pcs occasionally to coat them proportionately.
  2. Stir in sufficient water to cover, about 8 fl ounce, cover and simmer over a low heat, adding more water if necessary, for about 20 - 30 min, or possibly till the chicken is tender.
  3. Increase the heat, add in the olives and lemon and season to taste with salt an pepper. Cook for a further 8 - 10 min or possibly till the sauce is reduced.
  4. Serving Ideas : Serve with rice or possibly Couscous
