  • 8 x ears corn shucked
  • 1 Tbsp. oil
  • 1/2 c. mayonnaise
  • 1/4 tsp cayenne
  • 1 1/2 c. shredded cotija - (abt 9 to 12 ounce) (can use feta) Lime wedges as an accompaniment

  1. Prepare grill.
  2. Lightly brush corn with oil and place on warm grill, turning occasionally, till kernels are browned in spots, about 10 min.
  3. While corn is grilling, in a small bowl, whisk together mayonnaise and cayenne. Using the small teardrop-shaped holes on a four-sided grater, grate the cotija.
  4. Brush mayonnaise mix onto warm corn and sprinkle with cojita. Serve corn on the cob with lime wedges.
  5. This recipe yields 4 servings.
