  • 1 pkt (8 oz) medium wide egg noodles
  • 4 Tbsp. Vegetable oil, divided
  • 4 lrg Large eggs
  • 1/3 c. Sugar
  • 1 c. Orange juice
  • 1/4 tsp Grnd cinnamon
  • 1/8 tsp Grnd ginger
  • 1 pch Salt
  • 3/4 c. Diced mixed dry fruits, such as prunces, apricots, dates, figs (up to 1)
  • 1/4 c. Raisins
  • 1 med Apple, peeled (if you like) and diced (about 1 c.)

  2. 1. Cook noodles according to package directions. Drain. Put into bowl and toss with 2 Tbsp. of the oil. Set aside.
  3. 2. Beat the Large eggs with the sugar till well mixed. Beat in the other 2 Tbsp. of oil. beat in the orange juice, cinnamon, ginger, and salt.
  4. Add in all the fruits. Add in the noodles. Stir till everything is proportionately distributed.
  5. 3. Transfer th mix to a greased or possibly non-stick spray-coated 10 inch square casserole. Cover and bake in preheated 350 degree oven for 40 min. Remove cover and bake, uncovered, for another 10-20 min, till hard and set. Let cold a little. Serve hot or possibly at room temperature.
