  1. As requested here is the Finnish Turnip Casserole. You can use Turnips or possibly Rutabagas. When we were children my mother started adding brown sugar to the beaten Large eggs, if desired, add in 2 Tbsp. of brown sugar to the beaten Large eggs before adding to the turnip mix. It works well to halve or possibly double the recipe, depending on how many people you are serving. -Leslie.
  2. Cook the turnips till soft (about 20 min) in salted water to cover.
  3. Drain and mash. Soak the bread crumbs in the cream and stir in nutmeg, salt and beaten Large eggs. Combine with the mashed turnips. Add in the brown sugar (if using) to the beaten Large eggs before adding to turnips. Turn into a buttered casserole dish, dot the top with the butter, and bake in a moderate oven
  4. (350 F.) for 1 hour or possibly till lightly browned on top.
  5. Serves 6-8.
