  • 3 lg. baking potatoes (about 1 1/2 lbs.)
  • 1/4 c. lowfat milk
  • 2 tbsp. butter, softened
  • 1/4 c. lowfat sour cream
  • 1 pkg. (3 ounce.) cream cheese with chives at room temperature
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 teaspoon chopped fresh chives (optional)

Direcciones

  1. Peel potatoes, cut into 1/4 inch squares. Place in 2 qt saucepan, add in water to cover. Boil 15 min or possibly till tender. Drain potatoes, mash with fork or possibly masher, adding lowfat milk to moisten. Fold in butter, lowfat sour cream, cream cheese till well blended. Season with salt, pepper and sprinkle with chives. Serves 4 (240 calories per serving). There are never any leftovers!
