Ingredientes

  • 1 sm onion finely minced
  • 3 whl cloves
  • 2 Tbsp. extra virgin extra virgin olive oil
  • 500 gm red cabbage finely shredded
  • 350 gm bramley apples peeled cored and thinly sliced
  • 375 ml chicken stock or possibly a bouillon cube
  • 10 gm caster sugar
  • 1 pch grnd cinamon
  • 1 x salt and freshly grnd pepper
  • 2 tsp white wine vinegar

Direcciones

  1. Fry the onion and cloves gently in the oil till soft but without colouring.
  2. Add in the cabbage apples stock sugar cinnamon salt and pepper.
  3. Simmer over a moderate heat for about 35 min till the apples have dissolved and the cabbage is tender stirring from time to time to prevent sticking and adding more water if necessary.
  4. Add in the vinegar and simmer for a further 5 min.
  5. Red cabbage being spicy goes well with all sorts of game especially poulty such as goose and duck. I sometimes add in some sweet apple juice instead of sugar with wonderful results. I usualoy make more than necessary because it is so very good to eat and looks like a jam a couple of days later.
