Food and Nutrition education has been my life-long profession, first as a secondary classroom teacher and then at the university level. Finally retired, I am enjoying exploring many other cuisine types and recipes. Healthy cooking does it best for me, so I am always ready to tweak and personalize a recipe to meet my needs.
Influencias de Cocina
First and foremost cooking influences were those from my midwest-raised mother. I cook a lot like her in the basics, and she was also a terrific salad-maker, hence I became Salad Foodie! Adding to the early influences of her cooking were those I encountered in places I worked and lived - Colorado, Arizona, Utah, California, Florida and Germany. Over time our family hosted several students and chaperones from foreign countries (Japan, Germany, Lebonon) creating unique opportunites to explore those cuisines. Of course my educational training in food and nutrition rounded everything out.

- 12 de Octubre de 2020Did you attend school while living here in Utah? I am looking for a fool proof Banana Nut Bread recipe...anything come to mind? Also, what do you suggest for a glaze for the bread? I have lived ere in Utah my entire life, aside from the recent quake activity I would say its the greatest place on earth. Grew up in the Holladay area attending Wasatch JR & Skyline High, raised my family in east Sandy with my two children graduating from Alta High.. - 21 de Octubre de 2020Yes all my education up to college was right here in the valley. I attended Olympus High School, then the U of U. After graduating I left Utah and worked in various states and even overseas. Then back home I came! For many years I made banana bread with a recipe a coworker gave me in the 60's. But this past year I tried a new recipe out and became enamored with it - by far. It doesn't have a glaze but a streusel crumble on top, but it is delish. Try out "Banana Bread with Streusel Nut Topping." I think you'll like it!

Dick- 10 de Septiembre de 2019I am sure there's some very good books written for low cost quantity cook audiences. Do a search for "inexpensive quantity recipes" or something similar. Do the same on your public library website, and Amazon, etc. Ellenskitchen.com/bigpots has some recipes to check out. Also contact other community soup kitchens in your area to learn if they can recommend recipe sources. Good luck on your fine work!

- 24 de Octubre de 2013Ha - ha, Garielle: Regarding photo #2 on my profile page of the "Crookneck Family Photo" My neighbor gave me a sack of squash and when I sorted them out I came across these cute little critters. So I took them out to the garden and found a cozy and colorful backdrop for their photo shoot! Then days later - I cooked and served them. They're history!

Hi! I share your thoughts with respect to importance of nutrition and feel like i should also focuss on posting healthier recipes. I also teach food and nutrition to undergrads and so the subject is close to my heart. Also, as a mother of two year old, i cannot help but be concerned about nutrition. Would love to follow your work.
