Receta 4 Egg Sponge Cake

Ingredientes
- 4 large eggs, separated
- 1 teaspoon vanilla
- 1/2 teaspoon salt
- 1 1/2 c. all-purpose flour
- 2 T cool water
- 1/2 c. warm water
- 1/2 teaspoon cream of tartar
- 1 1/2 c. sifted sugar
- 4 T butter
- 1 T orange rind
- 2 c. confectioners' sugar
- 4 to 6 T orange juice
Direcciones
- Beat egg yolks and the salt in a large bowl till it is very thick and light colored. Add in hot water and beat for 5 min. Be sure mix fills bowl 3/4 full. Gradually beat in sugar and vanilla. Blend in flour. Beat egg whites till frothy. Add in cream of tartar, rest of salt, beat till stiff, but not dry. Mix in egg yolk mix. Bake 1 hour at 375 degrees in ungreased tube pan. Invert and cool 20 min in pan.
- This recipe is over 100 years old - 1 hour cooking time is too long so check at 40 min.
