Receta ADOBO WITH COCONUT MILK
Adobo is a Spanish word for marinade. It's the national food of the Philippines. Here's my version of this traditional Filipino cuisine. Delish!!!
Ingredientes
- ½ kg chicken, cut up
- ½ c vinegar
- ¼ c soy sauce
- 3 cloves garlic, minced
- 1 bay leaf
- 1 tbsp. sugar
- 1 tsp. salt
- ½ tsp. MSG
- ¼ tsp. black pepper
- ½ c water
- 3 tbsp. oil
- 3 cloves garlic, minced
- 1 medium onion, sliced
- 1 medium tomato, chopped
- 1 chicken cube
- 2 medium potatoes, quartered
- ½ c water
- 1 capsicum, quartered
- 3 tbsp. coconut powder
Direcciones
- Marinate the first 9 ingredients for at least 30 minutes.
- Transfer chicken and marinade in a pan and add water.
- Simmer for 30 minutes or until chicken is tender.
- Sauté garlic and onion in hot oil until light brown.
- Add tomato and chicken cube. Stir fry until mushy.
- Add potato and water. Cover and simmer until potato is tender.
- Mix capsicum, chicken and sauce, continue simmering for 5 minutes.
- Stir in coconut powder. Simmer for 3 minutes.
