Receta African Spinach And Peanut Butter Stew

Ingredientes
- 2 x Onions
- 2 x Tomatoes (peeled or possibly tinned)
- 2 lb Spinach
- 4 Tbsp. Peanut butter (not sweet!) Salt Pepper Oil for frying
Direcciones
- Slice the onions and fry in oil till soft. Peel the tomatoes in boiling water (or possibly use tinned tomatoes). Slice and add in to the onions.
- Wash, trim and chop the spinach coarsely. Add in to the stew and cook, covered, over a medium heat for 5 min, stirring to prevent sticking.
- Thin the peanut butter with warm water to make a smooth paste. Add in to the stew. Season with salt and pepper and cook for another 5 to 10 min, stirring and adding water if necessary to prevent sticking.
