Receta Akkra (Black Eye Pea Fritters)

Ingredientes
- 2 c. Black eye peas
- 3 x Green peppers (up to 4) Salt to taste Fat for frying
Direcciones
- Wash and soak dry peas over night in warm water. Remove out skins. Soak again till fully swollen. Lb. in a mortar till very smooth or possibly use food processor. Put aside in a bowl. Cut up geen peppers and process them. Add in to pea mix. Both must be smooth. Add in about 1 tsp. salt or possibly more to taste. Beat well till thick and creamy with a wooden spoon. Drop by spoonfuls into warm fat and fry till golden, drain and serve .
