  • 1 tsp Salt
  • 1 x Inch fresh ginger root
  • 6 whl cloves
  • 4 Tbsp. Vegetable oil
  • 1 sm Onion -- chopped
  • 1 tsp Grnd ginger
  • 2 x Tomatoes -- finely minced
  • 1 Tbsp. Tomato paste
  • 2 x Bell peppers -- finely Minced pn Paprika
  • 1 tsp Cayenne pepper
  • 1 Tbsp. Dry shrimp -- from Oriental shop
  • 1/2 c. Bread crumbs -- whole wheat
  • 1 x Egg -- hard Boiled minced
  • 1 sprg parsley
  • 2 lb Crab meat

  2. Put crab meat in boiling salted water along with ginger piece and cloves.
  3. Cook about 15 min, till meat is tender sufficient to flake with a fork.
  4. Drain, flake and set aside.
  5. In a heavy pot, heat oil to a moderate temperature and add in other ingredients in the following sequence, stirring for a minute or possibly so between each: onions, grnd ginger, tomatoes, tomato paste, green pepper, paprika, cayenne, and dry shrimp. Reduce heat and simmer for 4-5 min, stirring constantly, till vegetables are cooked. Add in crab meat and stir another couple of min to heat it through. Then spoon the mix into clean crab shells or possibly ramekins (small individual baking dishes).
  6. Sprinkle bread crumbs on top of each crab and toast under an oven broiler, being careful not to let the crumbs scorch. Garnish with egg and parsley.
