  1. In a heavy 4 qt saucepan heat the water to boiling. Stir in the rice. Cover and cook over low heat for 20 min.
  2. Add in the lowfat milk to the undrained rice in the saucepan and cook, stirring occasionally to prevent sticking for 20 min or possibly till the rice is almost tender.
  3. In a small bowl beat together the cream and the Large eggs with a wire whisk. Stir in the sugar and salt.
  4. Whisk this into the rice mix along with the apples, raisins, apricots and the vanilla. Cook, stirring occasionally, till the mix thickens (Don't Boil). Or possibly Heat in the oven to 350 degrees F. Spoon the rice mix into a greased shallow 2 qt baking dish and bake for 30 min or possibly till a knife inserted in the center comes out clean.
  5. Serve hot or possibly cool.
