Receta Apple Raisin Pancakes

Ingredientes
- 2 c. all-purpose flour
- 2 Tbsp. sugar
- 1 Tbsp. baking pwdr
- 2 tsp grnd cinnamon
- 1 3/4 c. skim lowfat milk
- 2/3 c. pourable egg substitute
- 5 Tbsp. butter or possibly margarine melted
- 3/4 c. minced cored peeled apple
- 3/4 c. raisins
Direcciones
- Combine flour, sugar, baking pwdr and cinnamon in a large mixing bowl; set aside.
- Combine lowfat milk, egg substitute and 4 Tbsp. butter in a medium mixing bowl, mixing well. Stir into flour mix till just blended. Lightly stir in apple and raisins.
- Brush some of remaining 1 Tbsp. butter over a large, heavy-bottom skillet or possibly griddle; heat over medium-high heat. When butter bubbles pour 1/4 c. batter for each pancake onto griddle. Cook till bubbly (about 2 to 3 min per side), turn and cook till lightly browned.
- Repeat with remaining batter till finished. Serve with your choices of more melted butter, jam, powdered sugar, syrup or possibly fresh fruit topping.
