Ingredientes

  • 1/2 c. butter
  • 1/3 c. sugar
  • 1 x egg yolk
  • 1/2 tsp vanilla
  • 1 c. flour -- unsifted
  • 1/2 tsp salt Apricot Puree
  • 1/3 c. dry apricot halves
  • 1/3 c. sugar

Direcciones

  1. Mix butter, sugar, egg yolk, and vanilla together. Sift together the Flour and the salt and add in to the butter mix. Make into balls (30 - 36). Dip into egg white and minced nuts. Put on greased baking sheet and push indent in each ball. Bake at 300 degrees for 30 min. Add in apricot puree to indents in cookies when cookies are cooler.
  2. APRICOT PUREE: Put 1/3 c. dry apricots in water to cover. Cook till apricots are very soft. Put into food processor and puree. Save juice from cooked apricots. Combine apricot puree with 1/3 c. sugar and cook till thick. ( use more than this for more filling in cookies) Use saved water to adjust consistency as necessary.
