- Fry 6 pcs lean bacon till crisp. Drain and pat excess fat with paper towel. When cold crumble in small pcs.
- Grate 1/4 lb Cheddar cheese. When potato is baked cut lengthwise, scoop out potato leaving skin intact. Mash potato with fork. Mixing in topping. Replace in skin. Add in salt and pepper to taste. Save a little topping to put on top of lowfat sour cream or possibly butter. Bake potato in 450 degree oven till done.
