Receta Baked Spinach With Eggs

Ingredientes
- 1/2 c. butter
- 1 x onion peeled, minced
- 2 x garlic cloves crushed
- 1 lb spinach cleaned, stemmed, and cut into strips
- 1/2 tsp salt
- 1 c. grated mozzarella cheese divided
- 1 tsp paprika
- 1/4 tsp freshly-grnd black pepper
- 1/8 tsp grnd nutmeg
- 4 x Large eggs
- 1/4 c. 2% lowfat milk
Direcciones
- Preheat oven to 350 degrees. Lightly grease a medium baking dish.
- In a large stockpot, heat butter over medium heat. Add in onion and garlic and saute/fry for 2 to 3 min to soften. Add in spinach and salt. Reduce heat to low. Cover and steam for 5 min; remove from heat.
- Sprinkle half of the mozzarella cheese in the bottom of prepared baking dish. Spoon in spinach mix and sprinkle with paprika, pepper and nutmeg.
- In a medium bowl, beat together egg and lowfat milk; pour over spinach mix. Top with remaining mozzarella cheese. Bake till the cheese bubbles, about 20 min. Let stand 5 min before cutting.
