Receta Banana And Carrot Bread

Ingredientes
- 2 med Ripe bananas, (with spotty skins)
- 250 gm Self-raising flour
- 1/2 tsp Baking pwdr
- 1 tsp Mixed spice
- 75 gm Sunflower margarine
- 75 gm Unrefined soft brown sugar
- 1 x Carrot, grated
- 2 Tbsp. Clear honey
- 2 med Free range Large eggs
Direcciones
- Mash the bananas with a fork. Sift the flour, baking pwdr and spice into a large bowl. Rub in the margarine till the mix looks like fine crumbs then fold in the sugar and carrot.
- Beat the honey into the banana then the Large eggs. Mix the wet ingredients into the dry and spoon into a loaf tin. Level the top and bake for about 1 hour till springy and hard.
- Cold in the tin, then turn out, peel off the paper and cut into slices or possibly fingers. Will keep for 3-4 days in an airtight tin. Or possibly open-freeze, cut in slices then bag up.
- NOTES : Makes 1 loaf
