- 3/4 c. butter
- 3/4 c. firmly packed dark brown sugar
- 1 c. ripe mashed bananas, 2-3 depending on size
- 1 egg
- 1/2 t. pure vanilla extract
- 1 c. all-purpose flour
- 1 c. whole wheat flour
- 1/2 t. baking powder
- 1/2 t. baking soda
- 1/4 t. ground ginger
- 1/4 t. salt
- 1/3 c. cacao nibs
- turbinado sugar for sprinkling (May substitute sparkling sugar.)

%3C/p%3E%3Cp%3EToday,%20I%20present%20a%20Banana%20Cookies%20with%20Cacao%20Nibs%20from%20an%20old%20revisited%20recipe%20from%202011.%3C/p%3E%3Cp%3EBanana%20Cookies%20with%20Browned%20Butter%20Frosting%20from%20June%202011%3C/p%3E%3Cp%3EThe%20original%20recipe%20for%20Banana%20Cookies%20Brown%20Butter%20Frosting%20can%20be%20found%20here.%3C/p%3E%3Cp%3EAs%20with%20a%20lot%20of%20my%20recipes,%20I%20often%20don%E2%80%99t%20revisit%20them%20after%20they%20are%20posted.%20%20There%20are%20a%20few%20exceptions%20like%20spice%20rubs,%20canning%20and%20preserve%20recipes,%20and%20most%20definitely%20my%20roasted%20tomato%20sauce.%20%20You%20see,%20I%20like%20to%20experiment%20with%20new%20recipes%20and%20so%20the%20old%20ones%20sometimes%20are%20lost%20in%20the%20archives.%20%20The%20Hubs%20likes%20to%20say,%20%E2%80%9CMmmm%E2%80%A6this%20is%20really%20good.%20%20I%20guess%20we%E2%80%99ll%20never%20have%20it%20again.%E2%80%9D%3C/p%3E%3Cp%3EAfter%20a%20weekend%20of%20working%20in%20the%20yard,%20I%20found%20two%20gnarly%20bananas%20on%20our%20counter%20that%20needed%20to%20be%20put%20out%20of%20their%20misery.%20%20I%20didn%E2%80%99t%20want%20to%20mess%20with%20making%20and%20frosting%20cookies,%20so%20I%20experimented%20and%20tweaked%20the%20old%20recipe%20just%20a%20bit.%3C/p%3E%3Cp%3EBanana%20Cookies%20with%20Cacao%20Nibs%3C/p%3E%3Cp%3EHeat%20oven%20to%20350%C2%B0F.%20Combine%20butter%20and%20brown%20sugar%20in%20large%20bowl.%20Beat%20at%20medium%20speed,%20scraping%20bowl%20often,%20until%20creamy.%20Add%20bananas,%20egg,%20and%20vanilla;%20continue%20beating%20until%20well%20mixed.%3C/p%3E%3Cp%3EIn%20a%20separate%20mixing%20bowl,%20combine%20dry%20ingredients%20and%20mix%20with%20a%20hand%20whisk.%3C/p%3E%3Cp%3EReduce%20speed%20to%20low;%20add%20dry%20ingredients%20(flours,%20baking%20powder,%20baking%20soda,%20ginger,%20and%20salt).%20Beat%20until%20incorporated.%20%20Add%20cacao%20nibs%20and%20mix%20until%20just%20combined.%3C/p%3E%3Cp%3EDrop%20cookies%20onto%20a%20lined%20baking%20sheet%20using%20a%20cookie%20scoop%20(about%201%20%C2%BD%20tablespoons%20full)%20%20and%20place%202%20inches%20apart.%20%20Sprinkle%20with%20turbinado%20sugar.%20%20Bake%20for%2010-15%20%20minutes%20or%20until%20edges%20are%20lightly%20browned.%20%20Cool%20completely%20on%20wire%20racks.%3C/p%3E%3Cp%3EFresh%20from%20the%20oven.%3C/p%3E%3Cp%3EThese%20are%20a%20cake-like%20moist%20cookie%20and%20the%20cacao%20nibs%20and%20turbinado%20sugar%20give%20them%20texture%20and%20a%20bit%20of%20crunch.%3C/p%3E%3Cp%3ESomewhere%20I%20recently%20saw%20a%20recipe%20for%20something%20like%20%E2%80%9CTriple%20Chocolate%20Cookie%20Overload%E2%80%9D%20(or%20something%20similar)%20that%20called%20for%20cacao%20nibs%20to%20be%20added%20to%20a%20chocolate%20cookie%20dough.%20%20I%20really%20thought%20it%20was%20one%20of%20Johnny%20Iuzzini%E2%80%99s%20but%20when%20I%20went%20back%20through%20Sugar%20Rush,%20I%20could%20not%20find%20it.%20%20I%20had%20initially%20thought%20I%20would%20make%20these%20great%20sounding%20cookies%20instead.%3C/p%3E%3Cp%3EOh,%20well.%20%20A%20new%20cookie%20is%20born%20in%20the%20kitchen%20of%20EE.%3C/p%3E%3Cp%3E%E2%80%9CMmmm%E2%80%A6these%20are%20like%20a%20banana%20bread%20cookie,%E2%80%9D%20munched%20The%20Hubs%20when%20I%20took%20him%20a%20fresh%20one.%20%20%20%E2%80%9CGuess%20we%E2%80%99ll%20never%20have%20these%20again.%E2%80%9D%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E){kind=link}
