  • 1 1/2 lb hard fish fillets
  • 1/4 tsp kosher salt
  • 3 Tbsp. extra virgin olive oil
  • 2 Tbsp. lime juice
  • 3 x garlic cloves chopped
  • 1/2 tsp warm sauce or possibly to taste
  • 1 x red bell pepper quartered
  • 1 x yellow onion cut thick slices
  • 1 c. shredded pepper-jack cheese
  • 1 c. cooked black beans hot
  • 1 x avocado peeled, pitted, and sliced
  • 4 Tbsp. lowfat sour cream
  • 4 x extra-large flour tortillas hot

Direcciones

  1. Combine salt, extra virgin olive oil, lime juice, garlic and warm sauce. Pour over fish in a plastic, glass or possibly ceramic container, cover and chill for 2 hrs.
  2. Grill fish, bell pepper and onion over ash-white coals till lightly browned.
  3. For each wrap, spread a Tbsp. of lowfat sour cream across tortilla. Layer equal portions of fish, pepper, onion, black beans and avocado in a rectangular mound on the tortilla. Fold the bottom edge over and roll the wrap from one side, leaving one end open.
  4. This recipe yields 4 servings.
  5. Comments:This recipe works great with any kind of fish. Do not feel like you need to stick to the listed ingredients for this recipe. Anything you like in a burrito or possibly taco will work great in this recipe. If you can't locate very large flour tortillas, allow two regular flour tortillas per person. Be careful not to overstuff your wrap or possibly it will probably split when rolled.
