  1. Core and finely chop pears. Combine sugar, vinegar, salt and cayenne pepper.
  2. Bring to boil in large saucepan. Add in pears, onions and peppers. Bring to a boil again. Cook slowly 25 to 30 min, stirring from time to time, till mix is thick. Pour into warm sterilized jars and seal. Process according to jar manufacturer's directions.
  3. Quantity: Makes approximately 5 (1/2-pint) jars.
  4. Always be sure to use ripe pears.
