Receta Beefy Tofu Enchiladas

Ingredientes
- 8 x 8-inch soft flour tortillas
- 1/2 c. Minced onion
- 1 lb Grnd beef browned and liquid removed
- 1 can Minced green chilies (4oz)
- 1 x Garlic clove, chopped
- 1 tsp Dry cilantro
- 10 1/2 ounce Hard tofu, mashed
- 1/2 tsp Cumin seed
- 2 c. Diced tomato, liquid removed
- 2 c. Thick tomato salsa
- 1 c. Shredded cheddar cheese
Direcciones
- Preheat oven to 350 degrees. Lightly spray a 9x13 inch baking dish with non-stick spray. In bowl, combine all ingredients except tortillas, tomato salsa and cheese. Place 1/2 c. of mix in center of each tortilla and roll. Place in baking dish, seam side down. Pour salsa over enchiladas. Sprinkle with shredded cheese. Cover pan with aluminum foil and bake for 25 - 30 min.
- Yields 8 servings.
