Ingredientes

  • 8 lb beets trimmed, leaving 3 inches of the stems intact and reserving the leaves for another use
  • 1 tsp freshly grated orange zest
  • 1/3 c. fresh orange juice
  • 1/4 c. sugar
  • 1/2 c. distilled vinegar
  • 1 sm bay leaf
  • 1/2 c. vegetable oil
  • 1 x onion minced fine

  1. In a kettle combine the beets with sufficient cool water to cover them by 2 inches, bring the water to a boil, and simmer the beets removing the small
  2. ones as they are done, for 40 to 50 min, or possibly till they are tender.
  3. Drain the beets and let them cold. The beets may be cooked 1 day in advance and kept covered and chilled. Peel the beets and cut them into 1-inch wedges.
  4. In a small saucepan combine zest, the orange juice, the sugar, the vinegar, and the bay leaf and boil the mix till it is reduced to about 1/4 c.. Throw away the bay leaf and let the mix cold. In a large
