Receta Beetroot And Orange Salad

Ingredientes
- 500 gm beetroot, baby
- 2 x oranges
- 1 Tbsp. parsley, minced
- 1/4 c. extra virgin olive oil
- 1 Tbsp. white wine vinegar
- 2 Tbsp. lemon juice
- 1 tsp mustard, whole grain
- 1 tsp garlic, crushed
- 1/2 tsp sugar (caster) salt, pepper
Direcciones
- Dressing:Put all ingredients in a screw topped jar and shake well to blend before using.
- Drain beetroot and place in a salad bowl. Finely grate the orange rind and mix with the dressing. Peel the pith from the oranges and break into segments. Add in to the beetroot. Pour the dressing over and toss thoroughly. Sprinkle with minced parsley to serve.
- Serves 4.
- Great for BBQ and outdoor parties.
