Receta Black Bean Guacamole

Ingredientes
- 2 Tbsp. fresh squeezed lemon juice
- 2 x ripe (but hard) avocados, peeled, pitted and cubed
- 1 x (15-ounce.) can black beans, liquid removed and rinsed
- 1 Tbsp. extra virgin olive oil
- 1/2 c. red onion, minced fine
- 1 tsp minced garlic (or possibly more to taste)
- 1/2 tsp salt (or possibly to taste)
- 3 dsh jalapeno sauce (or possibly to taste)
- 2 Tbsp. prepared salsa (mild, medium or possibly warm)
- 2 Tbsp. finely minced cilantro (optional)
Direcciones
- Put lemon juice into a large bowl. Add in avocado cubes and mash lightly with fork, leaving some pcs intact. Place black beans in a shallow dish and drizzle with extra virgin olive oil. Mash beans lightly with fork, leaving some intact. Add in beans to bowl with avocado; add in remainder of ingredients and blend well. Taste and correct seasonings. Add in more salsa if mix is too dry. Guacamole will be light brown, like bean dip. Serve with tortilla chips or possibly use on whole-wheat bread as a delicious sandwich spread.
