- 2 (15 ounce.) cans black beans, rinsed & liquid removed
- 1/2 bunch green onions, finely minced
- 1 red bell pepper, finely minced
- 1/4 c. minced cilantro or possibly Italian parsley

- Mix first group of ingredients, then toss with dressing ingredients that have been blended. Season with salt and pepper if necessary. Keeps well up to 1 week in refrigerator.
