Ingredientes
- 1 lb black beans, dry
- 6 c. chicken stock
- 4 Tbsp. extra virgin olive oil
- 1 c. yellow onion, chopped
- 1 x plum tomatoes, minced
- 1/2 c. green bell pepper, chopped
- 1/4 c. cilantro, minced
- 1 Tbsp. balsamic vinegar
- 1 Tbsp. sugar
- 2 tsp soy sauce
- 1 1/2 tsp oregano
- 1/8 tsp lemon pepper seasoning
- 1 x clove garlic, chopped
- 1/4 lb ham, in 1/2" pcs salt lowfat sour cream cilantro sprigs

- Soak the beans overnight in cool water. Drain. Place the beans in a large, heavy pot, cover with water and simmer for four hrs, adding some stock to cover the beans as the liquid is reduced. Meanwhile, heat the oil in a skillet over medium high heat. Saute/fry the onion till golden brown, then add in the remaining ingredients except the ham, salt and garnishes. Simmer for three min, stirring. Stir the ham and the contents of the skillet into the beans. Simmer, covered, for two hrs, stirring and adding more stock to cover the beans as necessary. Season with salt and serve with lowfat sour cream and sprigs of cilantro.
