Receta Black Bottom Cupcake Cookies

Ingredientes
- 4 oz bittersweet chocolate
- 1 stick unsalted butter
- 3 large eggs, slightly beaten
- 1/2 Cup brown sugar
- 1 Cup all purpose flour
- 3/4 Cup unsweeetened cocoa powder
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- Cream Cheese filling:
- 8 oz cream cheese, room temperature
- 1/2 Cup granulated white sugar
- 1 large egg
- 1/2 tsp vanilla
- 1/4 Cup semi-sweet chocolate chips

- 1) Preheat oven to 350F and line two baking sheets with parchment paper
- 2) In a small saucepan over low heat melt bittersweet chocolate and butter
- 3) Transfer to large mixing bowl and let cool for 10min
- 4) Combine flour, cocoa, and baking powder in a sepreate bowl and set aside
- 5) Once butter mixture is slightly cooled whisk in eggs, then add brown sugar and mix again until well combined
- 6) Stir in flour mixture with a wooden spoon until well combined (mixture will be thick)
- 7) Using 1 tbsp, scoop dough into balls onto prepared cookie sheet and place in fridge (if you don't want cookies to spread much during baking), meanwhile make the cream cheese filling:
- 8) With an electric mixture, beat cream cheese, sugar, egg, and vanilla until mixture is smooth and creamy. Then stir in semi-sweet chocolate chips
- 9) Remove dough from fridge and make a well in each dough ball (I used a toothpick and it worked well), then spoon 1 tsp of cream cheese batter into the well (It is okay if batter spills over the sides)
- 10) Bake cookies for 8 to 10min until cookie feels just dry to touch, let cool on sheet for 5min then remove to cooling rack and enjoy!
