Ingredientes
- 2 med /lg onions sliced thin on the mandolin
- 1 Tbsp. butter or possibly margarine I use butter
- 1 Tbsp. extra virgin olive oil
- 1 Tbsp. brown sugar
- 1 Tbsp. Balsamic vinegar
- 1/4 c. snipped tender Majool dates
- 1/4 c. toasted pine nuts
- 1/4 c. sliced sun dry tomatoes
- 1/2 c. shredded mozzarella cheese
- 1/2 c. shredded smoked cheddar cheese
- 1/2 c. shredded smoked gouda cheese
- 1 lrg Boboli

- Preheat oven to 450 with our without the pizza stone. In a large skillet cook the onion in the butter and oil over medium heat to caramelize the onions not fry them. Stir often. When browned, stir in the brown sugar, vinegar, dates and tomatoes. Stir well and remove from the heat and add in the toasted pine nuts. Mix the shredded cheeses together and spread over the top of the Boboli. Top this with the onion mix. Place this on the preheated stone or possibly on the oven rack and bake till warm and bubbly with the crust browned too....about 8-10 min. Remove and allow to set for 5 min on a rack. When set, place on cutting board and cut into small squares for easy finger food.
