Receta Bruschetta With Chopped Tomato Salad

Ingredientes
- FOR THE SALAD
- 2 c. Tomato -- minced
- 1 c. Red bell pepper -- minced
- 1 c. Yellow bell pepper -- Minced
- 1 c. Onion -- minced
- 2 tsp Capers
- 3 Tbsp. Fresh basil -- minced
- 1 Tbsp. Balsamic vinegar
- 2 tsp Lemon juice -- freshly Squeezed Black pepper -- to taste
- 1 x Clove garlic -- peeled and Chopped
- 1 tsp Dry oregano FOR THE BRUSCHETTA
- 8 slc Pizza dough baguette -- see Recipe
- 3 x Cloves garlic -- peeled and Halved
Direcciones
- Put all the salad ingredients into a large mixing bowl and toss thoroughly.
- Cover and chill for 1 hour.
- Preheat the broiler.
- Arrange the bread on the broiler rack and broil about 2 min per side, till browned. Remove the bread slices and rub them with the cut side of the garlic halves. Throw away the garlic.
- Place a mound of salad on each serving plate with 2 slices of bruschetta alongside.
