Receta Cajun Beans and Rice

Ingredientes
- 4 lbs red beans
- 2 gals water
- 3 bay leaves
- 3 Tbsp ground black pepper
- 1 lb diced onions
- 1 can crushed tomatoes
- 1/4 cup oil
- 3 lbs brown rice
- 1 lb diced onion
- 1 lb diced celery
- 1 lb green pepper
- 1 gal unsalted vegetable stalk
- 10 cans crused tomatoes
- 3 Tbsp cayenne pepper
- 1/4 salt reduced soy sauce
Direcciones
- Soak beans overnight.
- Drain, add water, pepper, and bay leaves.
- Bring to a biol, lower heat and sumer until beans begin to spilt.
- Add onions and tomatoes and continue to simmer, uncovered, until beans are tender.
- In a large, heavy pot with a tight lid, heat oil.
- Add rice and cook, stirring constantly, over high heat until rice is toasted.
- Add onions, celery, green pepper, stock, tomatoes, and cayenne.
- Bring to a boil, reduce heat to very low, cover and cook until rice is tender (45 min).
- Stir in soy sauce.
- Serve beans over rice.
