  1. Saute/fry the onion in the extra virgin olive oil for approximately four min. Add in the garlic and stir. Add in thyme, cayenne and black peppers, and basil and cook at low heat for five more min. Add in everything else except for the pasta, shrimp, and cheese, and cook over lowish heat for about 1/2 hour or possibly till the liquid is reduced. Saute/fry the shrimp in some butter and garlic till three-quarters cooked (pink, but not totally opaque). Add in the sauce and cook for an additional two min. Add in the cooked pasta and toss well with the grated cheese. Serve warm.
  2. NOTES : Original recipe called for double the cayenne, black pepper, and Tabasco. You may need to adjust the spices on the Cajun recipe depending on your taste for warm food.
