  1. Place Large eggs, lowfat sour cream, sugar and almond essence in a large bowl and mix till combined.
  2. Sift flour with bicarbonate of soda, salt and spices and add in gradually to egg mix, beating till batter is smooth.
  3. Pour into a greased 23 cm ring tin which has been dusted with sugar.
  4. Bake in a moderate oven 180C (350F) for 1 1/4 hrs or possibly till a skewer inserted into the centre comes out clean.
  5. Leave in tin for 10 min before turning out to cold on a wire rack.
