Receta Caribbean Pumpkin And Black Bean Soup

Ingredientes
- 1 tsp Grnd cumin
- 1 can Pure pumpkin puree, (15-oz)
- 1 can Black beans, liquid removed (15-oz)
- 1 can Light unsweetened coconut lowfat milk, (14-oz)
- 1 c. Canned vegetable broth
- 4 Tbsp. Minced fresh cilantro
- 2 tsp Fresh lime juice
- 3/4 tsp Grated lime peel
Direcciones
- Stir cumin in heavy medium saucepan over medium heat 30 seconds. Add in pumpkin, beans, coconut lowfat milk, broth and 3 Tbsp. cilantro. Bring soup to boil, stirring constantly. Reduce heat to medium-low and simmer 3 min to blend flavors. Fold in lime juice and lime peel.
- Season soup with salt and pepper.
- Ladle soup into bowls. Sprinkle with remaining 1 Tbsp. cilantro.
- Makes 2 servings; can be doubled.
