Throughout the Carolinas red rice is a favorite – either as a side or a meal if you’re generous with the sausage. As I’ve posted about, rice is one of our “Carolina Roots” and rice is a popular dish in my house. My Lowcountry sweetie says this is as good as his Mama’s so I’m posting it with pride! Simple and tasty and the most of the ingredients are always in my pantry – and that fits perfectly with our theme this month of cooking from the pantry.

Ingredientes

  • 3 tablespoons oil
  • 1 lb smoked sausage, sliced
  • 2 medium onions, diced small
  • 1 tablespoon minced garlic
  • ½ teaspoon salt
  • 3 ¼ cups water
  • 6 oz can tomato paste
  • 2 teaspoons salt
  • 1 tablespoon brown sugar
  • 1 teaspoon black pepper
  • 1 ½ cups long grain rice, uncooked

Direcciones

  1. Brown slices of sausage in oil.
  2. Add onion, garlic and ½ t salt.
  3. Cook until onion softened.
  4. Add water, tomato paste, remaining salt, brown sugar and black pepper.
  5. Let simmer 20 mins.
  6. Add rice and stir.
  7. Transfer to a 9×13 pan and bake at 350 for 35-40 minutes.
