My Dad is a diabetic and I am always looking for way's to reduce the sugar, add fiber, fruit, veggies & protein.

This is easy breakfast or snack food to grab and go that is healthy alternative instead of eating a bag of chips & a soda or going thru a fast food drive thru.

Just slice & wrap in plastic wrap and it's ready to grab and go!

I hope you enjoy this light & moist Carrot, Banna & Almond Bread.

This makes 2 loaf pan's.

Tip: You know it is done when a toothpick comes out clean and the sides pull away from the pan. Watch the loafs the last 45 mins to a hour because every oven is different. Be sure and let them cool before you slice & wrap.

Option's

1st Optional 1/4 cup of almonds slivers on top

2nd Optional 1 cup of plumped raisins folded in the batter at the end.

Or do both!
