Receta Apple Pulp, Raisin and Cherry Crumble Muffins

This is a great way to use up the pulp from your juicing. I have used this with apple pulp, pear pulp and carrot pulp. Use your favorite!

  1. Preheat oven to 350.
  2. In a large bowl mix sugar, splenda, eggs, oil and vanilla.
  3. In a seperate bowl, put 1 cup of raisins and 1 cup of dried cherries in a bowl and pour hot water over them.
  4. In a separate bowl mix the flour, corn starch, baking powder, baking soda and fresh ground spices. Whisk to combine dry items.
  5. Then add them to the wet ingredients. Do not over mix, just fold until you no longer see flour.
  6. Drain plumped raisins and cherries
  7. Mix in the oats, apple pulp, applesauce, raisins and cherries.
  8. Spoon into muffin liners lightly sprayed with cooking spray in a muffin tin, filling two-thirds full.
  9. For Crumble top take the cinnamon life cereal, oats, brown sugar and cubed butter and place in a ziploc bag. Mash together until combined and it looks like a course crumble. Evenly sprinkle the crumble on the top of the muffins.
  10. Bake at 350 degrees for 18 to 20 minutes, or until a toothpick inserted in a center muffin comes out clean. Remove from the muffin pan immediately, and cool on wire racks
