- 1 Tbsp. Baking pwdr
- 1 tsp Grnd cinnamon
- 1/4 tsp Grnd nutmeg
- 1/4 tsp Grnd ginger
- 1 x Egg
- 2 Tbsp. Vegetable oil
- 1/4 c. Raisins
- 1/4 c. Minced walnuts
- 1/3 c. Lowfat lowfat milk
- 8 ounce Can uns. crushed pineapple
- 1 1/2 c. Grated carrots

- Combine the dry ingredients in a bowl. Add in the remaining ingredients and stir to blend. Spoon into oiled muffin tins or possibly paper muffin c.. Bake at 350 F for 20 to 25 min.
