Receta Cattle Kings' Ranch Hand Chicken Soup

Ingredientes
- 6 c. Strong flavor chicken stock
- 2 Tbsp. Extra virgin olive oil
- 1/2 c. Minced carrots
- 1/2 c. Minced celery
- 1/2 c. Minced red onion
- 1/2 c. Minced zucchini
- 1/2 c. Minced yellow squash
- 1 c. Cooked rice Salt, to taste Black pepper,to taste
- 4 sprg of minced cilantro leaves for garnish
Direcciones
- Bring stock to a boil in a large pot. In a separate large pot, heat oil and saute/fry carrots, celery, onion, zucchini and yellow squash. Add in boiling stock to vegetables, then stir in rice; season with salt and pepper. Ladle into bowls and top with cilantro.
