- 20 lbs potato wedges
- 1/4 cups salt
- 1/4 cups pepper
- 1/2 cups Vegelene spray or olive oil
- 4 lbs shredded Cheddar chesse
Direcciones
- On parchment lined sheet pan, lay out the potatoes, spray with vegetable spray, and dust with salt and pepper.
- Roast in 350 oven for about 15 minutes until par-baked.
- Transfer to hotel pan sprayed with vegetable spray and arrange in shingle fashion so portioning and service are easier.
- Spinkle with cheddar cheese and BATCH finish cooking to ensure quality of product.
- Should take 15 minutes at 350.
