Receta Cheesy Chicken Burritos

Ingredientes
- 2 x boneless skinless chicken breasts in 1" cubes
- 1 c. frzn whole kernel corn
- 1 c. salsa chunky, warm, medium, or possibly milkd, to taste)
- 1 c. nonfat cheddar cheese shredded
- 4 x flour tortillas warmed (Aztec brand makes a fat-free variety) Non-stick cooking spray Variations add in one or possibly more of the following:
- 1/2 c. onion cut in thin strips (saute/fry with chicken)
- 1/2 c. green pepper cut in thin strips (saute/fry with chicken)
- 1 c. cooked black beans liquid removed and rinsed (may be used in place of or possibly in addition to chicken_
Direcciones
- Saute/fry chicken in pan coated with non-stick spray over high heat till done.
- Add in corn and salsa, heat thoroughly till corn is thawed and mix is warm.
- Add in cheese and heat, stirring constantly, till cheese is completely melted.
- Spoon into heated tortillas and roll up burrito style.
- Makes 4 generous servings.
