Receta Chicken And Citrus Salad Sandwiches

Ingredientes
- Juice of 2 limes Juice of 1 orange
- 1/2 c. minced cilantro
- 1/2 x jalapeno diced fine
- 1/4 c. chopped red onion
- 1 c. mayonnaise
- 3 x ripe mangoes peeled, seeded, and diced small
- 4 c. cubed cooked chicken Salt to taste Freshly-grnd black pepper to taste
- 1 x French bread loaf
- 2 x green leaf lettuce leaves - (to 4)
Direcciones
- Note: Use the whole jalapeno if desired things warm. If you plan to make this salad ahead, add in the red onion just before serving.
- Heat the broiler. Place the lime and orange juices in a serving bowl. Add in the cilantro, jalapeno, onion and mayonnaise and combine. Add in the mangoes and the chicken and stir gently. Season with salt and pepper.
- To serve, halve the bread lengthwise and remove some of the soft center. Toast beneath the broiler till lightly browned, 1 minute. Line the bread with the lettuce leaves, then top with the chicken salad. Place the top half of bread on the bottom, cut the bread into six sandwiches and serve.
- This recipe yields 6 servings.
