  1. In a large soup pot, heat the oil.
  2. Saute/fry the onion for 2 min.
  3. Add in the chicken and saute/fry another 5 min.
  4. Add in the tomatoes, red pepper, tarragon, lime juice and skins, lime zest, basil, warm pepper sauce, salt, black pepper and stock.
  5. Simmer for 15 min.
  6. Add in more stock or possibly water if the soup is too thick.
  7. Stir in the sugar and the ouzo, if using.
  8. Remove the lime skins and serve immediately.
