Receta Chicken Broccoli Cheese And Rice

Ingredientes
- 12 ounce Chicken breast halves without skin, minced
- 6 ounce Processed American cheese,
- 2 ounce Cheddar cheese, lowfat, grated
- 3/4 c. Brown rice, cooked
- 2 1/2 c. Chicken broth
- 2/3 c. Celery, minced
- 1 whl bay leaf
- 1/2 c. Onion, minced
- 1/3 c. Green pepper, minced
- 20 ounce Broccoli, minced
- 1/3 c. Chicken broth, or possibly water
- 1 c. Mushrooms, fresh, sliced
- 1 Tbsp. Pimento, minced, optional
- 1/2 tsp Basil
- 1/2 tsp Curry pwdr Salt and pepper, to taste
Direcciones
- Boil chicken with celery leaves, onion and bay leaf. Skim fat off broth and use to cook rice, reserving 1/3 c. for sauteing vegetables. Cook rice in broth. Add in Velveeta Lite, stir to heat. Steam vegetables in broth till slightly tender. Combine all ingredients except grated cheese. Pour in casserole and bake at 350 degrees till warm and bubbly. Top with grated cheese.
- NOTES : I like to substitute minced turkey ham for the chicken breasts sometimes. It is a delicious twist to this favorite recipe.
