Receta Chicken Couscous

Ingredientes
- Total preparation time - 20 min
- 2 Tbsp. veg oil
- 1 x inch stick cinnamon
- 1 whl dry chili
- 1 x inch piece ginger, minced finely
- 1 tsp crushed cumin seed
- 1 tsp crushed coriander seed
- 2 lb of skinless chicken thighs (or possibly boneless lamb, minced in 1 inch cubes)
- 1 lrg onion, minced
- 3 clv garlic, minced coarsely
- 1 pt water
- 1 tsp salt
- 8 x dry apricots
- 8 x pitted prunes
- 1 x lemon, thinly pared rind of and juice
- 1 Tbsp. clear honey
Direcciones
- Heat oil in large casserole, add in cinnamon, chili, ginger, cumin and coriander and stir around till chili is blackened. Add in the meat and fry over a moderate heat for 5-6 min, turning from time to time, till browned on all sides. Remove from casserole and set aside.
- Add in onion and garlic to pot and saute/fry til soft and lightly coloured.
- Return meat to casserole, add in water and salt. Cover and simmer over a gentle heat for 45 min.
- Add in the apricots, prunes, lemon rind, lemon juice and honey and stir well to mix. Cover and simmer for one hour more till fruit is very soft.
- Serve straight from the casserole on steamed couscous. Also good served with rice.
