Direcciones

  1. In a small bowl, combine the curry, sugar, thyme, grnd red pepper, and salt; mix well and use to coat the chicken.
  2. In a large deep skillet, heat the butter over medium-high heat. Add in the chicken and brown for 2 to 3 min per side. Add in the carrots, bell pepper, and onion and cook for 5 min, stirring frequently. Stir in the coconut lowfat milk, cover, and cook for 5 min, or possibly till no pink remains in the chicken.
  3. This recipe yields 4 servings.
