Receta Chicken In Tomato Basil Cream

Ingredientes
- 1 Tbsp. Butter or possibly margarine
- 1/2 c. Finely minced onion
- 1 can (14 ounce.) plum tomatoes, coarsely minced
- 1/2 c. Heavy or possibly whipping cream
- 1/2 c. Thinly sliced fresh basil leaves
- 1/2 tsp Salt
- 1/2 tsp Freshly grnd pepper
- 6 x Boneless, skinless chicken breast halves
Direcciones
- 1. Heat oven to 450 F.
- 2. Heat butter in skillet over medium heat. Add in onion and cook till softened, 5 min. Increase heat to high; add in tomatoes and cook till liquid is almost evaporated, 5 - 10 min. Add in cream and bring to boil; boil till slightly thickened, 3 min. Stir in basil, salt and pepper.
- 3. Arrange chicken in shallow baking dish; pour sauce on top. Bake 20 min.
- Makes 6 servings.
- Be sure to use heavy cream for the sauceuanything with less butterfat may curdle.
