  • chicken breasts/thighs
  • 1 cup coconut vinegar (no other alternative)
  • 2 lemon juice or 5 calamansi juice
  • 1 small ginger (pounded with skin on)
  • garlic (minced)
  • salt
  • atsuete (annatto) oil
  • atchara (pickeled raw papaya)

Direcciones

  1. Marinade:
  2. Mix all ingredients in a container with cover, marinade chicken for 2-3hrs (overnite is best).
  3. Grilling:
  4. Grill each chicken piece on low coal to make sure that the insides are well done.
  5. Brush with atsuete (annatto) oil on each sides as it cooks.
  6. Serve with cane vinegar with lemon, soy sauce, onions, chili (if you like it spicy) or sugar (if u like a sweet tang).
